INGREDIENTS:
Uncle Bens Natural Whole Grain Brown Rice
3 Boneless Skinless Chicken Breast
Eggs
Medium Head Fresh Broccoli
6 Medium Fresh Carrots
1 cup Frozen Peas
Green Onion bunch
EVOO
Garlic Powder
Ground Ginger
Paprika
Crushed Red Pepper
Low Sodium Soy Sauce
DIRECTIONS:
Cook Rice ahead of time.When done spread out on cookie sheet lined with wax paper and put in fridge to cool for at least 4 hours
dice up broccoli, carrots mix together and set aside
dice up green onion and set aside
dice up chicken and put in fridge ( you may desire to use the same seasoning to season your chicken before putting it in the fridge gives it an extra asian flavoring boost)
in a large frying pan scramble your eggs then set aside
in the same frying pan over medium heat add your EVOO and sauté chicken until browned add in green onion continue to sauté for 2 min then add in vegetables and soy sauce and sauté until the carrots and broccoli are tender
add in rice and eggs mixing well and adding your seasonings continue to cook over medium low heat until the rice is heated .. you may want to add more seasonings to your desire I usually just eyeball it and go for what I feel like that particular day :-) enjoy!!! makes about ten 1 1/2 cup servings
