My kids are leaving this weekend to spend spring break with thier dad and my hubby is out of town for the next 3 weeks. I'm gonna be on my own for dinner...cooking only for myself this next week. This is gonna be challenging going from cooking for 5 to cooking for 1 for a week.

Anyone have any good idea's on what I can make for 1 person? Im thinkin about trying some new stuff that my kids would probably not be too keen to try and want to squeeze more veggies in. No more soup. Ive been on a soup kick the past month and am kinda bored with it. LOL

    cook for 2 and save half for leftovers

    I love cooking a chicken breast on the George Foreman for dinner, throwing half on a salad and saving the other half to make with (I like tons of) celery and fat free mayo (chicken salad) for the next day. The 100 Calorie Wheat Thins make an excellent addition!

    Good idea! I love chic salad and I make mine the same way except I use plain yogurt instead of mayo. :) I havent had that in a while either... thanks!
