I really struggle to bother cooking when it is just for me, I love cooking, I cook for the children every day, and when my husband is home I cook proper meals for us, but he's away with work a lot of the week, and I find on those days I just can't be bothered.
Does anyone have any good, vegetarian ideas for food when I am on my own that don't take any time to prepare? I want things I can just buy, chuck together, and eat without having to think about it. It makes me depressed and lonely going to the effort of cooking a full on meal and then having to eat it on my own.

stir frys, a big batch of soup & sandwiches are always yummy too x0
