So I thought I would add the recipe for my Turkey-Broccoli-Rice Casserole. Nothing too special, but I like it and so do my kids, which is the really impressive part. :happy:

Ingredients:
1 lb Ground Turkey
1 Tbsp EVOO
1 Lemon
1 Can Cream of Broccoli Soup (I do the Healthy Select or Low Sodium)
1 Cup Uncooked Rice
1 1/4 Cups Water (or Chicken Stock)
1 tsp Worcestershire Sauce
1/2 Onion Chopped (Shallots are good too 1 whole in that case)
2 Cloves Garlic Minced
Salt & Pepper to taste
(You could also do a 1/2 cup of your favorite cheese if you wanted, but why add the unnecessary calories?)

Preheat oven to 375 degrees. Grease a 2qt casserole dish & set aside.
Brown the ground turkey in a large skillet (I add the EVOO since the turkey is so lean) adding salt, pepper, Worcestershire & the juice of 1/2 of the lemon.
In a separate medium mixing bowl combine the Broccoli Soup, rice, water, salt, pepper and the the juice of the other 1/2 of the lemon. Mix well.
Drain the fat from the ground turkey and add the onion. Cook until tender then add the garlic and cook for another minute. Combine the turkey mixture with the soup mixture (this is where you would add cheese if you wanted).
Put mixture into the casserole cover with lid or aluminum foil and bake at 375 for 45-55 minutes or until rice is done.

I have not figured out the nutritional breakdown for this recipe. If anyone could figure that out and let me know I would appreciate it. Thanks and enjoy.
