Butternut Squash - How do I know if this is good?

Ok, I LOVE butternut squash. I cut it into cubes and boil it and then mash it with the potato masher. Add some cinnamon and that's it. I'm sure it's delicious with brown sugar and butter, but I try and stay away from that.
It takes a long time to peel and cut, but it's worth it! I just cut into one and here's what I found:

I know that center part does not look right, so I won't eat that, but my question is if it's ok to eat the rest of it?

    Looks fine to me, not sure what looks wrong with it? If you're worried, cut off the parts you're not sure about and then use the rest.

    The long, thin part has some white/green stuff in there that I've never seen before. I think the top part looks ok though. Probably will be a lot of work for not a lot of food, but oh well!
  • i suppose you can roast it in the oven? ... i do that with spaghetti squash. cut in half. scoop out all the seeds... place cut side down on a non-stick baking pan ...and bake till you can feel it getting softer when you give it a little squeeze.
    i guess it would be the same with butternut... or you can microwave too

    Ahh I get what you mean. I'd just cut it out if you're nervous. Its most likely just how the squash grew - veggies can do some weird things sometimes :)

    Thanks - it's cut up and I got a decent amount out of it. I'm sure once I boil and mash it it will be just fine! (Let's hope...)
