I'm obsessed with my new breakfast! I can't do sweets (like cereal) in the morning - I have to have my protein early. So this is my new love!
1 Flat Out Flatbread Wrap
1/8 cup diced roma tomatos
1/8 cup baby spinach leaves
2 pieces Oscar Mayer Center Cut Bacon (or turkey sausage)
6 tbsp Egg Whites
Feta Crumbles
I always have cooked breakfast meat to make my mornings easier. So crumble the cooked center cut bacon in a pan and add the diced roma tomatoes and baby spinach (I roll up several leaves and chop the spinach a bit). Once the spinach has wilted a bit in the pan, pour the egg whites right over top and cook until the eggs are done, scrambling in the pan. I like to season with fresh ground black pepper and a bit of italian seasoning!
I also usually heat up my flat bread in a pan, but that's optional. Pour the eggs, meat, spinach and tomatos into the flat bread and sprinkle with a small amount of feta cheese crumbles. It's so filling and I usually can't even finish the whole thing. I added this to my food diary today and came up with the following:
257 calories
23 carbs
28 protein
only 3 saturated fat
Enjoy! I'd love to hear if someone has any variations to try!
