On a whim I bought an eggplant from the grocery section.

I'm an Eggplant virgin. Any great recipes?

    I absolutely love this baked eggplant parmesan. A little bit time consuming but so delicious! Not super low cal (what with the cheese), but you can try subbing in with lower fat cheese. (I'll be honest and admit I haven't tried that yet).

    Slice it, bake it, (brush with olive oil and bake at 350-400F). Then top with basil pesto, goat cheese and roasted red pepper. Delicious! And if you have some balsamic on hand ...then you could reduce it and drizzle a little over the top.

    slice the eggplant and put it in a frying pan with a little bit of olive oil. I usually put some spice on the eggplant too. cook it until tender and enjoy!
  • Eggplants are so versatile! Peel and dice an eggplant, put on a baking sheet lined wth nonstick foil, spray with Pam, then bake at 425 till browned. You can add this to a stir-fry (I like mine with green peppers, onions, and tofu) with a garlic ginger sauce (oyster sauce, chicken broth, sriracha hot sauce, fresh garlic and ginger). Also delicious tossed with pasta and tomato sauce. For a side dish, saute some red onions in a little olive oil and toss with the baked eggplant and some fresh chopped herbs.

    Chicken Ratatouille

    Ingredients

    1 large eggplant
    2 medium zucchini
    1 medium onion, chopped
    3 garlic cloves, minced
    1 tbsp olive oil
    1 lb cooked skinless chicken breasts, chopped
    2 cans (14.5 oz each) stewed tomatoes
    2 tsp dried basil
    1 tsp dried oregano
    2 tsp salt
    Pepper to taste
    First, cut the eggplant and zucchini into inch-long pieces.

    Next, saute the onion and garlic in olive oil in a large saucepan over medium heat until tender.

    Then add the chicken, eggplant, and tomatoes and bring everything to a simmer. Cover and continue to simmer for 15 minutes.

    After that’s done, add the zucchini and seasonings and simmer about 10-15 minutes, until veggies are tender.


    Serves 4 – 186 calories, 26 g protein, 7 g carbs, 4 g fat, 2 g fiber

    i like to slice it thin, salt it, rinse it, egg it, bread it with cornmeal and sesame seeds, bake it until it crunches, and smear it with pesto.

    Slice very thin and use instead of noodles in vegetarian lasanga (use about half the sauce you normally would) SOooo good!

    you can also bread the eggplant & lightly fry or bake it until its crispy

    then use the slices as "bread" for a sandwich or mini sandwiches.

    Make baked eggplant parmesean. Just slice, coat lightly with breadcrumbs and parmesean cheese. Bake. Dust with cinnamon (trust me) and top with tomato sauce. You could even melt a little mozarella on it (a little). Delish. If you're watching calories, go easy on the olive oil with eggplant...it soaks it up like a sponge.

    One thing I love to do with eggplant:

    bread it and spray a pan and bake it until tender and browned
    Add it on a roll with fresh mozzarella slice, artichoke hearts and a tomato. Drizzle with a touch of balsamic vineager.

    I made this the other day, it was yummy and the entire dish (8 generous servings) is only 5 WW points, if you're counting:

    1 can fire-roasted tomatoes
    1 eggplant
    1 green bell pepper
    3 carrots (medium- to large-sized)
    1/2 medium white onion
    1/3 Cup Italian-seasoned breadcrumbs
    2 Tbs grated Parmesan cheese

    1. Cut carrots into medium-sized pieces and microwave until tender, then dice.
    2. Slice bell pepper and eggplant and grill (or sauté), then dice.
    3. Dice onion (grill first if desired).
    4. Mix veggies in an oven-safe dish and add tomatoes. Stir well, and heat in oven until hot through.
    5. Top with breadcrumbs and cheese and bake 10 minutes.

    Slice it, roast it in the oven until soft inside, and top with hummus. Or tahini and feta cheese.

    Chop it, cover it in salt and let it drain for 30 minutes. Meanwhile sautee 2 onions with garlic in olive oil. Rinse the eggplant, put it in, and add a drained can of diced tomatoes. Top with parsley and/or cilantro. Enjoy. http://www.squidoo.com/how-to-make-georgian-eggplant
  • Easy, and my favorite: Slice, brush both sides with olive oil and roast in a 400F oven until tender and browned on both sides, turning once. Sprinkle with sea salt - yum!
