Pros and/or Cons of eating you exercise calories

I'm new to tracking calories. I've been reading up on everyone's take on the excess calories/day.
For me, I have days where I go beyond my 1200 and sometimes, I go below. What's the better idea? Do I eat till I reach 1200? Will I see weight loss? Do I leave it be and hope my metabolism doesn't go whack?
My exercise consists of an hour of zumba at the gym, 3-4x a week with a mix of slim in 6. I will be "shredding" ,hopefully, starting today!
I don't have much too lose (about 5-7 lbs) but aiming to lose the muffin top, belly and tone myself.
