Cooking from frozen?

If you're oven baking say, frozen chips... as they bake, do they become lighter due to losing water mass? And if so, is there a rough percentage of mass that they lose from defrosting?

Here is my technical look at it... Frozen Chips lose water turn a rich golden brown & also get very very hot, then once taken from the heating Machine put on a plate with (Here's a very important bit...) a blob (Tech speak for a bit) of Ketchup.... =D Your Welcome... LMAO0
