How to cook fresh veggies? Help please :)

I had a dumb... for the last few weeks I have been cooking up veggies thinking hey, this is awesome, the weight will just fall off. And then I've gotten all confused, why is the scale not moving or bouncing up during the week? This makes no sense! Duh, canned spinach and peas are really really high in sodium and I was cooking them in olive oil pam with a little season all to avoid calories, once again, sodium. So, I am looking for ideas on the best ways to cook fresh peas, spinach and potatoes that are low in calories and sodium but still tasty. Any other veggie suggestions?

  • I like spinach sauteed in a non stick pan with a little (I'm talking a teaspoon maybe) olive oil, lots of garlic, and maybe a little onion or tomato paste. Sugar peas are good lightly steamed. And potatoes... what about baked and then topped with low fat sour cream, plain yogurt, or ranch dressing? You might try a bit of lemon juice instead of salt on your veggies, I think it's fantastic on asparagus and spinach.

    bake 'em...or steam 'em...put a big pot of water on to boil, put a metal collander full of veggies on top of the steaming water, cover the collander and poke to see how soft they are every so often...i steam everything. i bake everything else.
  • It really depends on the veggie. I love to steam broccoli and etc., hardly ever do it because it is so much easier to buy the steamers. Cabbage I boil of course and spinach I like only fresh. Increase your water intake. I go over on my sodium daily but the scale has still been moving weekly.

    I'm a big fan of baking them in the oven - broccoli, potatoes, sweet potatoes, asparagus, green beans, cauliflower. Pretty much anything will work.
    I coat them with a thin layer of EVOO. I do this with a brush, or have the veggies in a bowl and measure 1-2 tbs of EVOO and coat everything. Then throw them in the oven (400-450) until they are done. Season them to taste with your favorite spices.

    I bake a lot of my veggies, sometimes steam. I use a little extra virgin olive oil and spices. I like garlic powder and Mrs. Dash's (no sodium) mediteranian blend for most of my veggies. Sometimes I get really crazy with my zucchini pieces and mix a little EVOO and about a 1/4 cup fo whole wheat bread crumbs and parm cheese and bake for about 20 minutes at 400. I like the little bit of crunch - like I'm eating fried zucchini. I also like to bake my cauliflower with just a little bit of EVOO, about 2 tbls, with parmesean cheese.

    I cook most of my veggies in one of three ways. I either saute them in olive oil, toss them in olive oil and roast them in the oven (or on the grill in summer), or stir fry them in peanut oil. Experiement with spices and herbs to season them without salt. There are several brands of salt free spice blends available.
