I found this while looking through a Biggest Loser Cookbook today and made it. It is really good and low calorie. Give it a try!!
1 medium very ripe avocado
1/3 cup plain, fat free greek yogurt
1 Tablespoon chopped basil
2 Teaspoons minced garlic
1 Teaspoon fresh lemon juice
1/2 Teaspoon salt
1/4 Teaspoon black pepper
Combine all in a food processor or blender until just smooth. Use immediately or store in the refridgerator.
Per serving: 35 calories, 2g protein, 2g carbohydrates, (0 sugars), 4g fat (0g saturated), 0mg cholesterol, 1g fiber, 150 mg.
Makes about one cup, or 8 (2-Tablespoon) servings.
