How to Keep a Food Diary when Focusing more on Low Carb

I'm refocusing my weight loss strategy because I'm just not losing weight with working out and calorie counting. Everyone's body and metabolism is different and, evidently, my current path is not as effective as I would like. The biggest misconception is that "Low Carb" means a Cave Man Meat diet. But I eat more veggies via low carb. But I still want to maintan a decent caloire count while doing low carb.

My problem is how to count calories when I pick various prepared salads or salad buffets from places like HEB, Jason's Deli, Sweet Tomatoes. Buffets are not my only way of eating...but how do I keep track? What to do???
