Help for my partner

Hey everyone, I'm new both to tracking my eating and the forums. I've started tracking my diet as I'm doing the Roller Derby Workout Challenge and MFP is a great way for me to ensure I'm doing the right thing (also keeps me busy when I think about boredom eating!).
I've never had a particular problem with my weight, I'm about 5"8 and 65kg. My partner is about 6"4/5 and weighed himself three days ago at 127kg, which is "equal to the heaviest he's ever been". He's not happy about this, however he's really particular about food and won't eat soup, doesn't like cooked orange vegetables... Does he have a higher calorie requirement than I do because he's a larger build?
I'm just wondering if anyone has any advice/websites/recipes I can use to help him with his goals. He's reducing his red meat intake and allocating a certain amount of days per week he can have a beer, but I think he can use all the help I can give him, I'm just not sure how to start because we think in such different ways.
