Workout ideas following a neck injury

At the beginning of the week I started a medical leave from work due to a neck injury I received in a car accident. Now my weight is creeping up because not only am I sedentary, but I am also bored and stress eating. My physical therapist okayed me to do low-impact exercise but I would be spending hours walking to burn what I normally do at work. Besides, I am a fan of the "kill yourself and get it over with fast" workout, which is no longer an option. And so are any sort of upper body and many core exercises.
I am planning on reducing my calories but I know it will be hard to cut back over 300 calories a day when all I am doing is sitting at home thinking about eating. I need some ideas to get me moving and burning cals without making my neck injury flare up.

Do something low impact so not to jar your neck like the eliptical, but your PT should be able to give you some advice. A neck injury isnt something you want to mess with!
