Low Carb Fried Chicken and Broccoli Cheese Soup

Low Carb Fried Chicken
6 Chicken Legs (or whatever you want to use)
3/4 Cup of Atkins Baking Mix
1 Egg, 2 T Water Beat together
Seasoning to taste (I like my fried chicken spicy so I put garlic powder, cayenne pepper, onion powder, salt)

I put seasoning in my Flour and My Egg mixture.
I dip the chicken in the flour then egg, then flour again.
Fry until golden brown and center of chicken is done through.

Broccoli Cheese Soup
1/2 onion diced
fresh garlic minced
1/2 stick butter
1 tsp of chicken bullion
onion powder
garlic powder
and parsley 1 T each of those
3/4 c. heavy cream
1 Carton Chicken Broth
1 1/2 cup shredded cheddar cheese
chopped steamed broccoli (I use frozen kind) When serving to my son I put the broccoli in the food processor so it's tiny, when I make mine i do bigger chunks.
xanthan gum to thicken (in gluten free section at walmart.. .40 cents for a little pkg about the size of a yeast pkg)

saute onion and garlic in butter until soft, sprinkle in seasonings, stir, add cream and broth and bring to a boil, add in broccoli, and bring back to a slow boil then sprinkle x-gum on top wait till it starts to thicken and then stir in, keep sprinkling a small amount at a time until thick as you want it. Then stir in cheese last.
