I decided to get creative last night....
And ended up with a halfway decent dinner :laugh:
I REALLY need to go to the grocery, but, want to use most of what I have. So, there I stood, staring into my pantry. A large can of tomatillos, a can of green enchilada sauce. Instantly, I thought, enchiladas. Nope. No tortillas. So, I decided to put my creative mind to work. :laugh:
I grabbed some chicken breast out of the fridge, cut it into strips, sauted it. Seasoned it with almost every spice I own in the skillet. (Basil, oregano, chilli powder, onion powder, crushed red pepper, garlic powder, and even a little cinnamin (sp) ). Browned the chicken. Threw in the can of tomatillos and enchilada sauce (I will only use half can next time it was saucy) and a little masa to thicken. Simmered for 20 min.
Poured mixture into a pie dish, sprinkled with 2% mexican cheese, crumbled a few tortilla chips on top and baked for 45 min at 400. Served it with sour cream (ff of course) and a little more cheese. It was actually pretty good. Will def make again
Tip: I didn't know whether to cut the tomatillos, so, I just left them whole :laugh: and it worked pretty well.

mmmm sounds pretty tasty! I love lots of spices as long as it is not too HOT and spicy lol :explode:0

The chicken was actually pretty spicy! I ate a piece before I mixed it and was like woah!!!! But, once it is all together, it is ok0
