Orange ginger baked tofu

Delicious!

Use extra firm tofu, thoroughly drained. It helps to freeze the tofu and allow to thaw, this results in chewier, meatier tofu.

marinade:
lots of grated ginger
garlic, minced
2 teaspoons finely grated orange zest
1/4 cup orange juice
1/4 cup dry white wine
2 tablespoons honey
1 tablespoon soy sauce
2 teaspoons olive oil


Combine all ingredient for the marinade in a small bowl and wisk vigorously.

Cut the tofu into slabs. Pour the marinade over the tofu in a baking dish. Marinate at room temp for about 10 minutes. Bake at 375 for 40 minutes. Flip pieces over halfway through baking. Broil for a minute or two on each side if you need additional chewiness/firmness.
