Diet Soda Cake Revisited

So I finally tried the Diet Soda Cake. I used the sugar-free Devil's Food cake mix and Diet Pepsi. Estimating calories at 120 for 38 grams (per cake mix box). I just had a small square that equaled to about 100 calories and I have to say I was a little disappointed. It had a very strange after-taste and I don't know if that's from the cake mix being sugar free or the diet soda. I wasn't bad.... I'm just not sure I'd want to spend 100-120 calories on it.

Maybe next time I'll try the regular cake mix. Anybody have any suggestions..... or does it just taste a little odd?

    I made a sugar free brownie mix today with diet dr. pepper and loved it!
  • Sugar free things usually aren't that good for you. Artificial sugar is just..gross and very bad for you. That's why you have an aftertaste.

    I'd rather have a tiny piece of the real thing.

    :flowerforyou: I normally use the cake mix with the colorful sprinkles and I use either Sprite zero or Diet Sunkist mixed together.. either way it's very tastey
  • My guess is that it was from the diet soda. I tasted the after taste of diet soda when I made this cake too, and I used regular cake mix. My kids and bf ate it right up but I couldn't eat more than one piece. I'm not a soda drinker, not even diet, so that's probably why I could taste the diet soda, I imagine people who drink diet sodas are already used to the after taste. However, if you ate a piece fairly fresh from the oven, that could be why also. I had a piece as soon as it cooled it off and I put the frosting on, not sure if it was from being freshly baked or what because the next day I took a fork and scooped out a bite and it tasted like regular chocolate cake, no after taste then, just when it was freshly baked. But I still haven't made it again, and don't plan to. I prefer the black bean brownies to diet soda cake any day!!

    spread the word!!! ive tried telling so many of my friends this, but they all still totally rely on there splenda and diet coke. Gross! Its worse then real sugar if you look into long term effects!
  • Ya, I was thinking about just using regular soda? I mean, one can of soda is about 150 cals right, and 120 cals for just a TBS of oil, so it'd still be less calories than using eggs and oil.

    I use Club soda instead of diet pop and often add blueberries, raspberries or cranberries or even a banana. MMM delicious and no artificial sweetner!

    What I have been doing lately is...... instead of using diet soda (which I tried and didn't like the flavor)..... I just use plain water. I make individual cakes in a cup and microwave.

    I use 2-4 tablespoons of dry mix and 1-2 tablespoons of water. Mix in a small cup or bowl. Microwave 20-30 seconds on high. It is YUMMY. I have also tried this with peanut butter cookie mix, chocolate chip cookie mix and brownie mix. All of them worked great for me.

    To figure calories, I added the dry mix only by grams into the database. Then I just measure however many grams of dry mix and put that in my diary. For instance, Pillsbury Devil's Food cake came out to be 134 calories for 34 grams of dry cake mix. That may be too high of a calorie count for some folks, but it works for me when I'm craving chocolate cake! And it may be more calories... but in my opinion, it tastes so much better than the diet soda cake and I don't mind using more calories for something that tastes good.

    When I'm daring, I may add a few butterscotch chips before microwaving..... or some lite whipped cream after cooking.

    I like preparing the individual cakes as I want them so I don't have the temptation of a whole cake or a bunch of cookies around all the time!

    Why not try pureed pumpkin? No artificial sugars and it makes cake very moist and delicious. You get the healthy benefits of the pumpkin also. I swear by it in all my cakes. One small can replaces water, oil and eggs although with certain cakes you might need a splash of water when you mix.
