Cheat Hollandaise - Eggs Benedict without horrific amounts

Ok so this is not a Hollandaise sauce recipe. BUT it is a great alternative and my family could not tell the difference. It is still naughty as basically mayo, but not as bad as pure butter sauce.

To make up enough for family of 5 you will need -

Fake Hollandaise -
Low fat / light mayonaise
Paprika
2 lemons
Balsamic vinegar
black pepper

English muffins
Lean bacon

Make sauce by adding a cup and a half of mayonaise, the juice of the lemons, tea spoon of balsamic, black pepper to taste and two teaspoons of paprika. Then stir until it turns into smooth runnier mayo sauce. This may take a min or two to stir out lumps as the lemon and mayo blend.

Slice muffins and toast, and grill the bacon, poach eggs as you would usually ( I boil a pan of salted water until boiling then reduce heat and stir to create whirlpool then crack eggs in and poach for 60-90 seconds)

Serve half a toasted muffin, bacon then egg then nice big spoonful of sauce.

My single portion of a rasher of bacon on top of half a toasted muffin, small egg and sauce came to around 300 cals.
