Fritatas are easy to make and low in calories

What is a fritata? It is like a quiche without the crust. I make them as they are quick, easy & can be used as part of a main meal or even as a snack. Here is my basic recipe but it can be altered to meet other needs or paletes. I use a 12 inch cast iron skillet ( bought it at WalMart) because it can go into the oven.
Sautee the following in 1 Tbsp olive oil or can use Pam in the cast iron skillet
1/2 cup sweet onions
1/2 cup each of chopped green and/or red bell peper
1 cup sliced mushrooms (I like portobellas)
1 tsp dried red peppers (I like it because it bumps it up a notch)
1/4 tsp ground black pepper
1/4 tsp salt (optional)
1 cup chopped tomatos
3 oz package of diced ham (can use sausage, bacon, or leave it only veggies)
When all veggies are cooked (can leave them a little cruchy) add
1 large carton (about 3 cups) Publix (can use any brand) egg beaters (can use real eggs, but that will bump up the calories)
1 cup fresh spinach (or not)
Sprinkle over the top
1 cup shredded low moisture mozzorella cheese
Bake in 350 oven about 20 min (it will puff up when it is done)
Allow to cool and cut into 8 slices like a pie and store in refrig. Will easily keep for 1 week.
What I love about this recipe is I can add what ever I have in the refrig.....any veggies or meats. Everything is cooked in one pan, and a fritata can be used as a breakfast, lunch or dinner. I have also used it as quick snack.

How many eggs do we substitute for egg beaters? Sounds delicious.0

For the full recipe I use the entire cartoon of of eggbeaters (3 cups). 1/4 cup eggbeaters = 1 large egg, therefore it will be 12 eggs. I use the eggbeaters to cut down on the calories & fat. I have used 1/2 eggbeaters & 1/2 eggs (6 large).
When you make this you can add any sort of herbs & spices you like. I have used rosemary if I want it more savory. It is one of those recipes you can add anything....broccoli, roasted red peppers, jalepinos, green chillies, or even put salsa over the top when you serve it.0 -
I usually add 1 egg per person eating the frittata, and the rest egg whites or egg beaters. I like them with feta cheese, spinach, and sliced black olives. Can sprinkle with cheddar cheese and stick under broiler until it's golden brown. Yumm yumm!0

Feta & spinach are so yummy. I have even added a little bit of brie.0
