Preparing Meals In Advance / Freezing Portions

Does anyone have good ideas and/or recipes for meals to prepare on the weekend that would freeze well in individual servings for the week ahead? Or freezing techniques/ideas would be great too!

By the time I get home from work at 5:30/5:45 I just want to have a healthy meal already prepared (or maybe that I could just pop in the oven when I get home). It would also be convenient for lunches. I tend to get bored with leftovers, so my thought was to prepare 4-5 meals on the weekend and freeze individual portions and be set for lunch/dinner all week.

Does anyone else do this? Thoughts? :)

One of my biggest food struggles is that when I am either tired or pressed for time I will opt for less than healthy food choices.
