you went over your target for that particular item.

MFP default puts protein too low for my liking, and fiber is lower than what I usually see suggested.

you can customize your targets or ratios at
my home > goal > change goals > custom

The numbers turn red whenever you go over whatever MFP recommended for whatever item you're looking at. So if MFP recommended you eat 1500 calories per day and you log 1600, you'll see a red -100 at the bottom of the calorie column. Same thing goes for the nutrients, if you log more than the number they suggested, you'll see a number in red that represents how far over you've gone. You can actually tweak the carbs/fat/protein split if you find something a little different might work for you - MFP has it set a certain way as a default, but you can change it by clicking on 'my home' then 'goals' then 'change goals' then choose 'custom' which will allow you to change the percentage that is split between carbs/fat/protein. For example if you want to focus more on protein, you can make that percentage higher and it will make the other items a bit lower.

Thanks to both of you for all your help.
