I'm looking for some good soup recipies. I'm currently on a soup diet. I eat a normal meal and the rest of the day is soup. I'm getting bored already. HELP, PLEASE. I also would love some supportive, new friends. ;). Any soup ideas are welcome. Thanks ahead of time. I'm willing to try anything.

    Try this Crock Pot Taco Soup ( I used ground Turkey)

    Ingredients
    1 (16 ounce) cans pinto beans
    1 (16 ounce) cans white beans or 1 (16 ounce) cans kidney beans
    1 (11 ounce) cans niblet corn
    1 (11 ounce) cans Rotel tomatoes & chilies
    1 (28 ounce) cans diced tomatoes
    1 (4 ounce) cans diced green chilies
    1 (1 ¼ ounce) envelopes taco seasoning mix
    1 (1 ounce) envelope hidden valley ranch dressing mix
    1 lb shredded chicken, ground beef or 1 lb any meat
    Directions
    Cook meat and drain.
    Shred if needed.
    Add all ingredients to crock pot.
    DO NOT DRAIN CANS.
    Stir.
    Cook on high for 2 hours or low for 4 hours.
    Keep on low until serving to keep hot.
    Garnish with sour cream, shredded cheese, chopped green onions, or tortilla chips.

    I know a SW based soup called Superspeed soup which is so filling and good.

    1 tin of Mixed Bean Salad
    2 tins of chopped tomatoes
    1 tin of split lentils
    1 carrot
    1 parsnip
    1 tin of baked beans
    stock (as much or little as you want in my opinion)
    Spices or herbs to give it a nice flavour
    1-2 chopped potato
    1 leek

    Cut up, mix together in a pan and boil until very soft. I've never blended it but you can if you like. Keeps for a while. :)

    Mexican Chicken Soup
    Just tried this over the weekend. YUM
    2 cans "mexican style" tomatos
    1 can black beans rinsed and drained
    1 can low sodium chicken broth
    1 lb boneless skinless chicken breast
    1 tsp cumin
    1 tsp chilli powder
    1 tsp black pepper

    Cook and shred chicken
    Combine ingredients and simmer

    Can be served w/ shredded cheese, low fat sour cream, tortilla strips or chips

    Soup is pretty hard to go wrong... if there's a veggie in the fridge that's got to be used up before you have to throw it out.. into the soup pot it goes... you can just toss everything together or keep track so you can rebuild the soup another time if it's a great hit.

    One of our favorites is the Turkey Sausage, Kale, and White Bean Soup recipe from skinnytaste.com. We had it last night, actually. It's very easy to make and is delicious and satisfying! For the turkey sausage, I either buy Honeysuckle White turkey bratwurst or 99% fat free ground turkey breast & season it myself.

    This is partially from a weight watchers soup recipe and some hospitals diet someone gave to me a couple years ago. So I took what I liked from both and made one yummy stew like soup. Here is what I do:

    2 Cans of Stewed Tomatoes
    3 plus large green onions sliced
    1 largest container of no fat beef broth (or chicken)
    1 package dry Lipton Soup Mix (I get chicken noodle)
    1 bunch of celery sliced
    2 cans green beans (or fresh I’ve done both) as is
    2 Lbs carrots (that’s a lot of carrots use a pound and than eyeball what you want) slice them shred them however you want. I slice them
    2 green peppers chop

    Zucchini and cabbage optional sliced
    I always use the cabbage…sometimes the zucchini
    These two add last

    Seasonings

    I add 2 tbls tomato paste
    Garlic (to your liking)
    Worcestershire sauce
    Oregano
    Basil
    Parsley
    Sea Salt

    The last time I made it I added 2-12 oz cans of V-8
    It was good

    Sometimes it’s too thick and you have to add some bouillon cubes diluted in liquid chicken or beef whatever you prefer
    If I am using Chicken for the main recipe I add beef
    I personally like it like a stew Mom likes it a little soupier so it’s all a matter of taste

    Let it simmer for a while and than adjust your seasonings to taste
    The Worcestershire sauce gives it a little zing
    You can add any kinds of seasoning you want
    Hot sauce, curry etc…..

    Tom Yam noodle soups are delicious & really low calorie & low fat!

    This is the recipe that I use at least once a week!


    (for 2 people - I always have some left over as well!)


    1 red pepper - sliced into strips
    2 handfulls of mushrooms - sliced
    1 onion - finely chopped
    1 large garlic clove - minced
    800mls veg or chicken stock
    2 tbs thai red curry paste
    2 wheels of dried wholewheat or plain noodles
    1tbs soy sauce
    Zest & juice of 1 lime.
    1 handful of sugarsnap peas cut in halfs (optional but very tasty)

    _________________________________________________

    Fry the peppers & onions for a few minutes until slightly tender.
    Add the mushrooms and minched garlic & sautee for another 2 mins.
    Stir in the thai red curry paste

    Add the stock & soy sauce. Bbring to a simmer.
    Add the noodles & cook for 4mins (or time that is stated on the pack)
    Add the zest & juice of the lime

    If adding sugarsnap peas, add these near the end & cook until still crisp.

    Divide the soup, noodles & veg between 2 bowls.

    ENJOY!

    This has very few calories but is very filling & tasty!
    I tend to eat mine with chopcticks & then slurp the broth. YUMMY!
