Ingredients:
5-6 boneless skinless chicken thighs
1 tbs freshly ground black pepper
1 tbs cumin
1/2 tbs cayenne pepper
1/2 tbs cinnamon
1 tbs minced garlic
honey
1tbs olive oil
Mix the spices together in a zip loc bag, adjust them to your taste (more cayenne for heat, cumin for smoky, etc). I personally just eyeball it. Also add the garlic to the bag, then place the chicken in the bag and close the bag. Now use the bag to massage the spices around the chicken, trying to spread the spices and garlic evenly.
Add the 1 tbs of olive oil to a saute or frying pan and set it to medium high heat. Sear each side of the chicken thighs. If the heat is high enough, the chicken will have golden brown marks. But don't worry about cooking the chicken completely, you'll finish it off in the oven.
Place the chicken, flat side of the thigh up, in a glass oven dish, and preheat your oven to 350 degrees.
Drizzle honey on top of each piece of chicken. Use a bbq baster to distribute the honey evenly.
Cook in oven for about 15-20 minutes, basting with the juices at least once around 10 minutes.
