Healthy cooking without a stove?

My vote would be #1 a George Forman grill and if that's too expensive right now you can get my #2 an electric skillet for under $40 at Target. Best of luck!0

You guys have some awesome ideas and it's opening up a whole new world of crock pot cooking for me (I've pretty much only used it for soups, stews, and sauce-based recipes). Looks like we'll be living out of the crock pot! I'm looking forward to trying some new recipes for cooking meat in the crock pot.
Great ideas, everyone!
You really can do almost anything with it. It's easily my favorite piece of kitchen equipment.0 -

I have nothing to add as far as the healthy cooking goes, I agree with everyone else, getting a cheap toaster oven or george forman is going to be the way to go.
I just wanted to say good luck and God bless. I did a complete kitchen remodel in 2008 and I went with out a kitchen for 5 mos, it was freaking crazy hard and I about went insane (I am a foodie).0 -
Crock pots are your friend!! That being said....I use mine for meat often....you can cook a whole chicken, a pork roast, beef roast!0

5 months?! Holy cow. We're planning for around a month for the total remodel, but we're just replacing the flooring and counter tops, painting cabinets, painting all the walls, and getting new appliances. No wall moving or rearranging appliances, so hopefully we'll be fully functional at the end of this month!0 -
Crock Pot
Totally. We're also having a bit of a remodel in the next couple weeks and I"m going to be leaning pretty heavily on the crock pot!0 -
Do you have a grill? If not this might be a good time to invest in one with a side burner. I use my grill more then my oven when it comes to my meat. You can even do veggies in foil packets on the grill.
We grill all year round here in NC, though we did the same in NJ as well. Love the grill.
I was going to suggest the George foreman or some other electric grill or electric skillet.0 -

We gutted the entire front of the house and replaced everything. It was total insanity, especially since we both work from home. I did not have a crock pot but I had a weber grill with a side burner and a rather mild couple of months so I could cook outside.0 -
Do you have a toaster oven? If it's just you and your husband, this may be a good option, and they usually aren't very expensive.
Also, your microwave shouldn't do anything to your food that your normal cooking method would do. If you're steaming veggies in the mocrowave, it's just like steaming them on the stove...

Microwaving is not normal cooking. My advice is to do some online research -- particularly look for an experiment where plants are watered with microwaved or nonmicrowaved water.
Try steaming your veggies in your rice steamer and cooking meat and veggies in the crock pot with less liquid.
a new kitchen! Nice!!!0 -
I lived without a cooker for a co. uple of years. The star in my armoury was an electric steamer (I think in the us you have rice cookers, they're similar but not the same).
I could cook entire meals in the steamer... Salmon rice and veggies was a favourite. Very healthy.
Maybe look into that type of thing but my number one now would (as others have said) be crock pot.0 -
We have a REALLY NICE rice cooker (a fuzzy logic zojirushi) and I don’t think I can steam veggies in it. I’ll have to find the manual and check it out because I don’t want to ruin it by trying it >.> but I may need to invest in a cheap rice cooker/steamer just so I can do veggies (and make coconut rice!). The rice cooker makes the best regular rice I’ve had, but I worry about putting anything else in there because I’m not paying $100 to replace it!0
