Cilantro Chicken Curry
This is a pretty easy to make recipe. But you need to like cilantro and mint to be able to cook and eat it :-)
Each serving comes to about 334 calories with 41 grams of protein, 24 grams of carbs and 0-10 grams of fat depending on what oil/spray you use.
Ingredients
100 grams of chicken strips, preferably breast.
100 grams of 0% Fage Greek Yogurt. You can substitute any yogurt you like.
1 bunch of cilantro, approximately 1.5 cups of leaves
A handful of mint leaves
2 green chillies, the spicier the better. I used Thai. I am Indian and I like it spicy!
1 garlic pod.
1 inch strip of fresh ginger. You can substitute with ginger and garlic powder. I just prefer going fresh
2tsps of lemon juice.
Salt, pepper, cumin powder to taste.
Curry powder is optional.
1 cup of onion, finely chopped.
Method
1. Grind the cilantro, mint leaves, garlic, ginger, green chillies into a paste. Add the salt, pepper and lemon juice to it. You want a good tangy paste, almost like a chutney.
2. Mix the paste with the Greek yogurt and the spice powders. Marinade the chicken in this mix for a good hour to two hours.
3. In a heated pan, add spray/oil/butter and sauté the lions till they turn translucent.
4. Add in the marinaded chicken, and remaining yogurt mix and cook till the chicken is nice and tender to eat. :-)
Good with any form of bread, or in a sandwich or with rice!!
