Is there any recipes with Quinoa & chicken as a main dish?

Anybody knows a good recipe uses quinoa as a main dish and not vegetarian? I have seen many awesome recipes for quinoa as a soup or salad or dessert etc, but it is rarely the main dish. Or if it is the main dish, it is vegetarian.

I like to cook quinoa for dinner , but vegetarian is not going to cut it for my husband.
I assumed quinoa would be perfect for casserole type of recipes, but after 20 minutes googling, I have find only 2.

Shout me with your fav recipes please!

    If you do decide to make this I always add a little italian seasoning to it for some extra flavor!

    I just use quinoa in place of rice as my whole family prefers it. A basic baked chicken and rice dish? Just sub quinoa for rice and proceed as usual. Easy peasy. Any recipe you have that uses rice you can sub the quinoa.

    I normally do a steamed vegetable or salad with it. It is very filling and good for you. Just a side note... when you make it it will be very runny and you will probably think you did something wrong. I thought this the very first time I made it but it turned out wonderful! I also do not use the rub for the top of it. I have made it both ways and it tastes just the same. It just saves some time by not using the top rub! I hope you enjoy it as much as I have!

    I just saw this recipe today. It is shrimp & quinoa, but I'm sure you could sub in chicken for the shrimp.

    I just tend to make things up as I go.
    Quinoa, olives, sausage, sundried tomatoes, spinach, red onion, and anything else I feel like putting in.
    Definitely going to have to try out some of these other recipes though

  • My favorite thing is self-created, I make a Basil-Chicken-Quinoa bowl (aka, stirfry). Have you seen those tubes at the grocery in the refridgerated produce section of squeezable fresh chopped herbs? I know, I should use fresh Basil but I live alone and it's too expensive to only buy and use once. ...

    I start with a base of a teaspoon of olive oil and a half tbsp of the basil spread, and 1/3 cup water, some chicken bouillon (beware, it can get salty). I then stir in anywhere from a tablespoon to 1 oz of quinoa, and let it sit on medium heat for about 10 minutes.

    Then I throw in diced chicken breasts and any vegetable I am feeling! Usually onions, garlic, kale, peppers, broccoli cuts. It's up to you! Enjoy.
