Homemade Vegan / Gluten-Free Pizza

A co-worker just brought me a slice of this tasty pizza.

After begging him for the recipe, I thought I should share the deliciousness:


-Melt Coconut oil over low heat in small pot, enough for 1/4 cup.

-Preheat oven to 300.

-Process 6 carrots and put 1 cup aside.

-In the remaining carrots add 4 cloves of garlic and a dash of oil, small bottle.

-Put aside in bowl.

-Process 1 cup sunflower seeds and 1 cup buckwheat until well ground.

-Add 1 cup carrots, 1/4 cup coconut oil, dash of seasoned salt and 6-8 parsley sprigs.

-Spread mixture over round pizza pan greased with remaining coconut oil.

-Spread left over carrot mixture, Daiya cheese, green onion, red onion, parsley sprigs, celery and a dash of seasoned salt over crust.

-Cook for 45 minutes.


He said it was incredibly easy to make, and he did it with 2 bratty kids screaming in the kitchen.

The crust has a wonderful nutty taste, and everything stays together fairly well. So tasty!
