Pork Soup
300 grams lean pork fillet cut into thin strips
1 cup carrots chopped
1 cup mushrooms chopped
2 chicken stock cubes
1 cup spinach
6 cups of water
100gr dry pasta
2 tblspoon light soy sauce
spices (i used chilli powder, pepper, chives, parsley)
pork bone (optional)
put water and stock cubes in large pot. bring to slow simmer. add in mushrooms, carrots, spices and pork bone (optional). simmer till soft. remove pork bone if you have added it. add the soy sauce and adjust to taste. add the pasta. half way through the cooking for the pasta, add the pork. once they have cooked, add in the spinach.
serves 4.
per serving: cal 194, carbs 23, fat 1, protein 22.
