Quick Black Bean Burritos

I love mexican food and this burrito mixture can be mixed, stored and a used for a quick meal.
Cook one package of Uncle Ben's microwave brown rice or long grain wild rice.
Mix with one can of black beans (low sodium) and a can of rotel.
I use wheat tortillas, light sour cream, and salsa.
It's delicious!!

  • No. Sorry. I don't have the nutritional info. But, yea, it has to be low fat and high fiber.

    Ro*tel is a name brand of canned Tex-Mex foods. salsa's, beans ect...:wink:
  • I also put in a little red onion and corn sometimes. The black bean burritos are filling and easy to cook up if you are in a hurry! Great idea about preparing them ahead of time!
