Tomato soup recipes?

Anyone got any tasty ones? I'm particularly interested in lower sodium alternatives to the canned Campbell's and Progresso varieties.

    Hey my Firelfy friend! I love tomato basil soup. Don't know how it compares to canned, as I've never eaten canned tomato soup. Mine is yummy though!

    1 - 28 oz can Hunts whole plum tomatoes, no salt added
    12 oz tomato juice, V8, or water
    1/2 cup chopped fresh basil (not dried!)
    1/4 cup heavy cream

    Simmer tomatoes and juice/water for 40 minutes. Puree until smooth with a stick blender, return to a simmer and add basil. Off heat stir in cream. Salt and pepper to taste. 4 servings, each 122 calories 5 grams of fat. Pour over ciabatta bread broiled with a slice of swiss cheese and don't feel guilty because it is SO GOOD. Like pizza in a bowl :love:

    Thanks Pinup! I'm not sure how tinned tomatoes compare to tinned soup when it comes to sodium. I'll have to check.

    Bump, anyone got any recipes that use fresh ingredients?

    Not sure how the regular ones are, probably bad! I get low or no sodium when I can.

    I use crushed roasted garlic tomatoes and add italian seasonings, light sour cream, veggie stock and a little flour/corn starch to thicken to desired consistency...hmmm soooo good!
