white whole wheat flour?

I try to only use whole wheat flour when making baked goods for my family (minus cookies usually, which I rarely make). I use the brown whole wheat flour, but I see a lot of recipes call for the white kind. Is that just as good/healthy? What's the difference between the brown and white?

    I use the King Arthur brand and it is milled from white spring wheat. Traditional WW flour is made from red wheat. It is just as healthy, it is just from a different type of wheat and doesn't make baked goods quite as dense (in my experience) as regular WW flour.

    Flour is flour whether it's whole wheat or not. Both are highly refined and processed. Both are unhealthy.

    Most things are processed to some degree- yogurt and cheese have been "processed" by humans for thousands of years. I can take wheat and mill it myself...Viola! Processed.

    I don't plan on cutting out flour. I am just trying to choose a healthier version of it. I do not cut out any food group, and I've lost over 100 pounds. :wink:

    White flour is easier for the body to digest. At least this is what the Amish guy who mills wheat told me.

    I don't eat any of it, but that's because my body is mean and intolerant.
