Weight gain or maintenance?

I eat approximately 500 calories less per day than what MFP says I'm supposed to eat. This has resulted in a nice loss of about a pound a week for half a year. Fine. But what is really going to happen when I start eating 500 calories more per day? Theoretically I should simply maintain whatever the weight is at that time and not gain or lose. But is that really going to happen? Does anyone have any experience with this?
I'm somewhat concerned that my body is going to think I'm overeating and start storing those "extra" calories and my weight will simply climb back up. Yes, No?

My best advice is to slowly work up. Instead of jumping to a much larger caloric intake, I'd go up by maybe 50 calories every day. Keep weighing and listen to your body. If you notice drastic changes, take these into account.0
