Delicious Low Calorie Balsamic Salad Dressing

I tried the no-oil balsamic salad dressing at Whole Foods the other day and LOVED it. It's my new favorite thing. Luckily, they actually post the recipe for it on their website. I had no clue that there were dates in the dressing; you can't taste them at all. I recommend that you use a nicer brand of balsamic vinegar for this recipe. Per serving (2 Tablespoons): 30 calories (0 from fat), 0g total fat, 0g saturated fat, 0mg cholesterol, 180mg sodium, 6g total carbohydrate (1g dietary fiber, 4g sugar), 1g protein
No Oil Balsamic Dressing
Ingredients
2 cups boiling water
3 tablespoons packed chopped pitted dates
1 cup balsamic vinegar
3 tablespoons reduced sodium tamari or soy sauce
2 tablespoons Dijon mustard
3 tablespoons nutritional yeast
1 tablespoon onion powder
1 clove garlic, minced
Method
Pour water over dates in a medium heatproof bowl and set aside to let soak until soft, about 15 minutes. Reserve 1/4 cup of the soaking liquid and then drain dates and transfer to a blender. Add reserved water, vinegar, tamari, Dijon, yeast, onion powder and garlic and purée until smooth.
Enjoy!
