Black Bean Patties with Mango Salsa--- YUM!
BLACK BEAN PATTY With MANGO SALSA
• 2 cans black beans, rinsed and drained
• ½ cup finely chopped fresh cilantro
• ¼ cup of shredded cheese*
• 2 teaspoons ground cumin
• ½ medium jalapeño pepper finely chopped
• 2 large egg whites
• 1 garlic clove minced
Preheat oven to 350
Place black beans in a medium bowl; mash with a fork. Stir in all ingredients until smooth. Shape mixture into 6 (½ inch thick) patties.
Arrange patties on a baking sheet (spray baking sheet with cooking spray or use parchment paper).
Bake for 10 minutes, turn over, and bake another 10 minutes.
Serve with mango salsa.
(You can also cook these on BBQ and serve on whole wheat bun like a burger, with some lettuce and the mango salsa)
Mango Salsa:
• 1 large ripe mango, peeled, seeded & coarsely chopped
• 1-2 tbsp chopped fresh cilantro
• 1 tsp crushed garlic
• 1 tbsp minced jalapeño, seeds removed & diced
• 2 tbsp fresh lime juice
• 1 avocado
Combine all the salsa ingredients in a bowl; season to taste with salt & pepper. Refrigerate salsa until ready to serve. Makes 1 cup.
* The cheese can be omitted, but it does give it some extra flavor. I prefer veggie cheese, as I do not eat dairy… Soy cheese would also work… To keep low fat use part-skim cheese.

Yes they do! The beans contain quite a bit of moisture and help with the bonding of all the ingredients.. If you feel they are too dry, once you have mixed it all up, add a bit of water, tablespoon at a time.0
