GOOD CALRIES BAD CALORIES..SUGGESTIONS?

I am physically recoving after going through breast cancer treatment two years ago. The radiation treatments really knocked me down as far as my endurance/energy level. The end of December I woke up feeling fabulous! I discovered mfp and have been dedicated to getting my life back ever since. Technically I am a moderate in all aspects but one, I grow, cook, and preserve as much food as I can for myself. I have been apart of the natural foods industry for over 30 years, so am always aware of what I am eating. No sodas, no fast or deep fried food.
Ok, so much for my background. I work out 6-7 days a week, 60-90 min. My routine is usually Tae Bo, Yoga, jogging, and Zumba. Generally I "suposedly" burn at least 500 cal aday. I consume around 1100 calories a day, sometimes more, sometimes less. My weightloss is slow... Everything I am reading says I should be eating at least 1200 cal aday, but I gain sooooo easily I can't bring myself to do it consistantly. I am 57, 5'6", started out weighing 170, am presently at 159, and am aiming at getting back down to 135.
If I need to eat more calories, are there some absolute NO foods? I make my own ww bread, love peanut butter, cheese, toast, but am getting totally paranoid about fats. I eat mayber 1-2 slices of bread a week, next to no cheese. I have a mocha my husband makes for me in the am, lowfat cottage cheese and grapefruit for breakfast, moderate lunch and dinner. When I do lose a pound its back the next day or so, then drops again by the end of the week.
I am open for suggestions. I have a sedentary job, working from home. All of you and my husband, and daughter are my support group. Thank you in advance for your help and understanding.

The trainer that I work out with told me not to be scared of healthy fats. That just because I am burning fat, doesn't mean I should eat less of it. I have been trying to keep this in mind as I eat this week. I'm also not eating any processed carbs after 5pm, and by that I mean brown rice, whole wheat bread, cous cous, anything like that, Unless I'm going to be up late that night. I'm trying all this stuff out this week, so we shall see how it goes!
But I would say to eat those calories. You might need to play around with the exact right number, but you will find it.
And never go below 1200 a day. Your body needs energy to function, plus energy to get you through those workouts. If it thinks you aren't going to provide it with enough, it will go into starvation mode and you won't lose any weight.
