Help me meet my goal! :-)

I need some MFP help on one of my goals for this month:

EAT A NEW VEGGIE!

Instead of listing all the veggies I have had...I'll just ask for some suggestions! Something rare, a little uncommon, exotic even! I'll make it known that I loathe cooked greens (spinach, collards, kale) and despise baked beans (but love pretty much all other beans).

Give me your best ideas! :flowerforyou:

    I also hate cooked greens. love fruit hate the veggies...lol

    I love fruit too and love veggies...but just the smell of cooked greens makes my stomach turn! :sick:

    Maybe some butternut squash or some spaghetti squash. Both are yummy!

    A few I've had, a few I have no clue how to cook and some I've never heard of! Any prep instructions or recipes? :)

    I think maybe the bok choy, jicama and bamboo...those are at least familiar sounding and I know I've seen them at the grocery :smile:

    Be gentle with bok choy. Quick heat (shrimp, bok choy, fish sauce, and garlic) is tasty.

    Bamboo shoots are yummy in stir fry.

    Jicama works well raw in salads and such. It actually does pretty well in stir fry, too.

    Thanks for the new ideas! I've got to go get all of my produce this weekend so I'll be looking for at least one of those!
