Sorry I posted this in the wrong forum the first time... (I'm new)
So, I just found a recipe for Peanut Butter Chicken, and substituted PB2 for what it called for in regular Peanut Butter. Just substituting PB2 made a DRASTIC change in the stats for this recipe. Just thought I would share
PB2 Peanut Butter Chicken:
6 X 4oz boneless, skinless chicken breasts
1/2 cup Fat Free Italian Dressing
1/2 cup white vinegar
1/2 Tbls low sodium soy sauce (it originally said to use 1 Tbls, but PB w/o salt, so I cut it in half since PB2 has some salt)
5 packets Stevia
6 Tbls PB2 (reconsitute before use)
1/2 tsp crushed red pepper flakes (for very mild use 1/4 tsp)
Topping:
Green onion, chopped (1Tbls per serving)
Preheat oven to 375 degrees. In a small bowl whisk together everything except the chicken and green onion. Place raw chicken in an oven proof (9x11) dish and pour sauce over top. Bake uncovered for 30 minutes or until chicken is done. Top each portion with 1 Tbls chopped green onion.
Enjoy!! Let me know what you guys think. I had it for dinner tonight and it was FANTASTIC!!!

How timely is this recipe?!
I just received my PB2 yesterday. I've known about it for years but thought ugh just another crappy diet product. Man was I wrong! It is delicious. I guess I was expecting it to taste fake or chemically like other diet products - not at all - which I guess makes sense because it is just peanuts and salt.
Also, PB Chicken is my DH's favorite meal. COOL!0 -
bump -- Thanks for posting this!
I have a recipe for Peanut Butter Vegetable - Chicken soup that I absolutely love. You've inspired me to try substituting PB2 for the peanut butter in it.0 -
Interesting. Hubby loves anything peanut butter. Would have never thought to use it this way. Don't know what pb2 I'd. But can buy natural peanut butter at the store. Hmm. Might try this0
