Looking for healthy beef or pork recipes

So normally to cut calories and fat I would use more chicken and turkey in my cooking, HOWEVER my husband is deathly allergic to poultry of all kinds (chicken, turkey, duck, etc.). It's rare, but does exist believe it or not!

Also, he and my 2 year old are pretty picky eaters, so I'm not going to talk them into much, if any, fish. And don't even get me started about trying to cook a vegetarian meal. *Sigh* Talk about an uphill battle! But I've been working on it.

Sooooo . . . anyone have a tasty AND healthy meal idea using lean pork or beef?

    I made this recipe for dinner last night. It is very easy and very good. Everyone loved it. I served it with corn and a greek salad.

    HERBED PORK TENDERLOIN WITH OVEN ROASTED POTATOES

    1/3 cup olive oil
    2 garlic cloves, minced (I used 1 and 1/2 tsp garlic salt instead)
    2 tsp. dried rosemary leaves, crushed
    2 tsp. dried thyme leaves, crushed
    1/2 tsp. salt
    1/4 tsp. pepper
    2 whole pork tenderloins (3/4 to 1 lb. each)
    2 and 1/2 lbs. new potatoes, quartered (I cut mine into small cubes to make sure they would cook through)

    Heat oven to 375. Stir oil, garlic, and seasonings together; coat meat with 3 tablespoons of seasoning mixture. Place in large roasting pan or casserole dish. Toss potatoes with remaining seaoning mixture and arrange around meat in pan.

    Roast 35 to 40 minutes or until meat thermometer registers 155 degrees and juices run clear, stirring potatoes after 20 minutes. Broil on top rack of oven 5 minutes to brown. Let stand 5 minutes under foil before slicing (temperature of meat will continue to rise another 5 degrees). Serves 8.
