I just made this and it's so amazing so I thought I'd share. Another altrenative is leaving out the almond milk and blending only the strawberries and pouring that over the ricotta+vanilla mixture for a low fat "cheesecake"

Serves 1

Ingredients:

• 1/2 cup quartered strawberries (frozen or fresh)
• 1/4 cup low fat ricotta cheese
• 1/2 cup unsweetened vanilla almond milk
• 1/4 tsp vanilla extract
• 1 tbsp toasted almond slices
• splash of lemon juice (optional)
• 1-2 packets of stevia (optional)
• 1/2 cup crushed ice

Toast the almonds over medium-high heat until lightly browned, then blend all ingredients until smooth and enjoy! I also like to add a scoop of protein powder to make it more substantial as a meal.

Total nutrition (without protein powder):180 calories, 14g carbohydrates, 12g fat, 18g protein.
