Egg fried rice! (Not as unhealthy as it sounds!)

Okay, so if you have some left over rice, (brown, white, wild, any kind) here's a simple recipe that's pretty good and it's really filling too. If it's not leftover rice that's already seasoned, then you can season it with any kind of flavors you like. I used the butter and garlic rice-a-roni.
In a teflon pan, heat up 1 tsp of oil.
Take about 1/2-3/4 of a cup of rice, 1/4 a cup peas and carrots, steamed or canned, and throw them in the oil. Stir it around for about 5 minutes. Take 1 egg and crack it on top of the rice. Stir it all up until the egg is cooked.
Eat. Enjoy.

  • h, and try sprinkling a little bit of feta on top. It's a perfect side dish for a piece of baked or grilled fish!

  • And the recipe is a one-serving recipe. You can up the amounts of rice and vegetables and eggs for more people. You shouldn't need very much oil on a teflon pan, just enough so that the egg doesn't stick.
