Tapioca Wrappers - Any ideas?

Have a package of tapioca wrappers from my local asian market, and they are 20 cals each and big! I usually make summer rolls (grilled shrimp, lettuce, shredded carrot and ponzu sauce) in these for a cold, low-cal lunch, but wondered if anyone has worked with them before and has any other ideas?

They are VERY easy, come in disc-like sheets about the size of a tortilla and all you have to do is soak them in warm water until pliable, wrap your fillings and roll!
