Broccoli, carrot and Chickpea salad with Homemade Lemon Vinn

GFK- Broccoli, Carrot and Chickpea Salad w Lemon Vinaigrette (Edit post)

This is actually not from the Ghetto Fab kitchen but the "Big Vegan book" by Robin asbell.

I reduced the oil, increased the lemon juice and reduced the salt from the original, so if you have the book, check out page 177. This was a zippy quick salad to make, and requires a steamer. Follow the directions for steaming- It makes a difference if you go too long or decide not to steam.

1 Head Broccoli
1 Large Carrot
1/8 cup extra virgin olive oil
Juice of a 2 in diameter lemon
1/8 tsp of salt
1/2 tsp black pepper
14 OZ of Chickpeas (1.75 c) drained and rinsed
1 c minced parsly

1) prepare your steamer; get it steamin'!

2) Slice broccoli into bite size morsels. Sneak one or two. Yell at the teenager that walks by in a food driveby and threaten to make them scrub the floor as they sneak one. This is vital or you may run out of broccoli.......
