75 calorie Cabbage Soup

This is delicious. I don't care if you don't like cabbage, it's delicious.

So super easy to make, too. :)

Ingredients;
1/2 head of cabbage chopped fine
1/2 bundle of celery chopped fine
1 can stewed tomatoes
1 box low sodium low calorie vegetable broth (go organic if you can)
Optional; 1 can of pickled beets

Chop up cabbage and celery and put into large soup pot on low heat with the stewed tomatoes and beets. Chop the beets and tomatoes up a bit with the spoon if you'd like, the pieces can tend to be a bit large. Let the vegetables soak up some of the juice from the tomatoes and beets if added before pouring in the vegetable broth. Turn up the heat and bring to a boil, then turn the heat back down and let simmer, stirring occasionally, until the vegetables are soft.

You can halve the cabbage and celery if you want a smaller amount or a less dense soup, but I'm not sure what the calories would be.

75 calories a cup, this is a great lunch or just something to snack on when you're hungry for less healthy things. Can be eaten hot or cold.
