I'm Puertorican and I'm still trying to find some!
All I can tell you is use brown rice instead of white, cut down on the sodium by using low sodium ingredients & use lean meats.
  • Are plantains fattening?

Any food can be fattening if you over do it.
I love plantains but you know we love them fried. So, try baking them instead or use cooking spray instead of oil.
  • Thank you, Gracias!

I'm puerto rican and yes you can make all spanish food healthier but it's hard as hell

    Oil = Canola or Olive
Rice = Brown rice when you can
Beans = Low Sodium and always rinse them
    Center Cut pork
    Skinless Chicken
Ground Turkey or Chicken instead of Beef or pork
Turkey and Chicken sausage instead of pork
Sodium free adobo or make your own
Make your own sofrito, less salt
Plantains saute in a little butter instead of deep frying them

These are some of the things I have done to make my meals healthier
  • Thank you Gracias! Made baked maduros and you know what it didnt kill me and they were really good.

Have your tried them with ground meat and cheese?

You split them almost in half (looks like a sub roll  ) and lightly cook them unitl they begin to brown.
Spray a baking pan with pam or similar and set aside
Saute ground meat (chicken or turkey) with sofrito, sazon, adobo
Add in diced red & green peppers and a spanish onion
When the meat is cooked all the way through pour on top of plantains sprinkle with your farvoite cheese and baked in a 350 oven until the plantains are golden brown
Serve with brown rice or just eat alone.

    I've had that in PR.
    They look like little boats.
    Sooooooooo good!!!
  • MMMMM sounds good. One thing I make is coco rice but I sub brown rice and it still tastes good. I use 1c rice 1c water 1c coco milk saffron cook. When its done I add green onions and crushed garlic and some sazon completa. MMMM cant get enough! I will try the boats. Maybe I'll lighten it with ground turkey.

I will go food shopping soon and will pick some platanos to make those yummy botes.
You sure can use ground turkey. That's what I'll use.
I also use low sodium adobo.. you know that's high in sodium :noway:

I use both turkey & chicken together with awesome results. I find the flavor is better and doesn't have the greasy taste when it gets gold.

I also use that same combo for meatballs, meatloaf, tacos/burritos, picadillo and anything that calls for ground meat. My kids and friend notice the change in flavor and liked it.
