Calorie Intake

I'm not sure that my Calorie intake vs my deficit is right???? Some weeks I loose weight but the next I am gaining it back. WHY???? I don't understand! I am a third shifter that works 12 hours and I sit at a desk for those 12 hours at a computer! I do excercise 2-3 days a week either walking 4 miles or doing Zumba and sometimes both on the same day. There has been a couple days that I have went over but those are usually on my cheat day and I am usually excercising more that day. I could care less what the scales say, I just want my belly fat and thigh cellulite gone!!!!! Any suggestions?
