Mexican Chicken Soup

2 cans "mexican" style tomatoes
1 can or 1 cup frozen corn
1 can low sodium chicken broth
1 can black beans rinsed
1 lb boneless skinless chicken breast

Combine ingredients in saucepan. Bring to a boil and then simmer for 20-30 minutes
Shred chicken with forks
This also works well by throwing it all in the crock pot for the day

Can be served with cheese, sour cream, tortilla chips if you like

Serves 8

Sorry, I forgot to write down the nutrition info, but its something like 150 calories a serving
