Valentine's day dinner (and dessert) for two!

Chicken Parmasean with whole wheat pasta
Ingredients:
8oz perdue fit and easy 99% fat free chicken breast (thin sliced)
6 Tbsp egg beaters (egg substitute)
1/4 cup vigo italian style bread crumbs
4 Tbsp Olive oil
1 1/2 cups Barilla roasted garlic pasta sauce
4 oz barilla whole wheat spaghetti
1/2 cup kraft natural reduced fat mozzarella cheese
Directions:
Soak chicken in egg substitue and desired dry seasoning (I use badia complete seasoning) **atleast 30 minutes**
remove chicken from egg and coat lightly with bread crumbs (set aside)
heat olive oil in a non stick skillet on med/high heat and flash fry each piece of chicken until lightly golden turning once (about 1-1.5 minute per side) drain on a paper towel.
Place chicken flat in a small baking dish and top with pasta sauce. Cover loosely with foil and bake 15-20 minutes. Remove foil and top each piece of chicken with 1/4 cup of mozzarella cheese and bake uncovered another 5-10 minutes until cheese is melted well. ***Use baking time to prepare pasta according to package directions*** (baking times will vary depending on your oven)
Serve: Divide pasta into two servings and top each portion with one piece of chicken (4oz) and spoon remaining sauce from baking dish over pasta and chicken. Serve hot with desired side salad.

Strawberry Short Cake:
Ingredients:
1 Cup sliced strawberries
4 packets splenda (about 1 tsp)
2 store bought short cake shells
4 Tbsp Cool whip free
**Atleast one hour prior to serving** In an ziplock bag combine strawberries and splenda and knead softly to get the juices flowing. Refridgerate.
Serve: Spoon half of strawberry mixture over each cake and top with 2 Tbsp cool whip. Enjoy :drinker:
