Oatmeal Pancakes

I was looking for a hearty and delicious pancake recipe to start my day and came across this recipe for oatmeal pancakes:

I made a few tweaks to reduce calories and suit my tastes. It was ABSOLUTELY delicious (even my husband who isn't an oatmeal fan loved them). Two things: 1 cup of oats in the blender or food processor did make 3/4 cups of oat flour. I microwaved the cooked oats for 2:30 and they came out great.

The tweaks: I subbed out whole milk for fat free and sugar for stevia. I cooked using Pam spray and topped with a light dusting of powdered sugar. I made the batter the night before which made for a very quick breakfast this morning. A batch makes about four servings at 450 calories a serving with 16g of protein. I typically target a breakfast under 350 calories because I enjoy a morning snack. With this breakfast, there was no need for a morning snack at all. I was comfortably full until lunch. ;)
