Curried Pea Dip
1 lb frozen peas - fully thawed (key step for texture consistency)
3-4 scallions, tips trimmed
1 tsp kosher salt
2 T curry powder (or more to taste)
4 T + olive oil (texture's the kicker)
Put the peas, scallion, salt and curry powder in the food processor and pulse until completely combined.
Then turn the processor on and drizzle in the olive oil to 'whip' it into the mixture until smooth.

Tuscan Bean Dip
1 can cannelini beans
2 T minced garlic
2 T chopped sage (not rubbed, you want the flecks)
1/2 t kosher salt
4T + olive oil
1/4 cup finely diced carrot
1/4 cup finely diced celery
Pulse the beans, garlic, sage and salt in a food processor until well mixed and broken down.
Turn the processor on and drizzle in the olive oil until the mixture is creamy.
In a serving bowl stir the carrots and celery through.0
